Shrimp Scampi with linguine

Burrito Bowl

Ingredients:

Canned Cannellini beans (or whatever bean you prefer)

Canned kidney beans

Can of tomato sauce (15oz)

Can of Rotel diced tomatoes & chilies (10 oz)

 99% fat free ground turkey or 95% ground beef

 Fat free sour cream

Fat free shredded cheddar cheese

Salt, pepper, garlic, onion, chilli powder (to taste)


Instructions:

Combine all ingredients into your crockpot on low for 8 hours. Once it's ready add sour cream and cheese. Enjoy!

Ingredients:

99% Ground turkey (or beef)

Ortega 40% less sodium taco seasoning

Can of corn

Can of black beans

Cooked white rice (Optional)

Fat free shredded cheddar cheese

Fat free sour cream

Jalapenos

Lettuce mix

Tomato


Instructions:

1.) Brown the ground turkey until it's completely cooked through. 

2.) Add the taco seasoning. (follow bottle instructions based on how much meat you are using.)

3.)Add meat to bowl and combine with corn and beans.

4.)Add th lettuce, tomato and jalapeno

5.) Add your cheese and sour cream

Chocolate chocolate Chip Cookies

Ingredients:

Olive oil (2 tsp)

Garlic cloves (6 medium, minced)

Dried oregano (1 tsp)

Uncooked shrimp (1 pound)

Table wine (1/4 cup, dry white)

Cornstarch (2 tsp)

Reduced-sodium chicken broth (3/4 cups)

Salt (3/4 tsp)

Black pepper (1/8 tsp)

Uncooked linguine (8 oz, cooked and kept hot)

Fresh parsley (1/4 cup, chopped)

Basil (2 tbsp)


Instructions:

1.) Heat oil in large skillet. Add garlic and sauce for 1 min. Add oregano and stir to coat. Add shrimp and sauce until bright pink, stirring frequently, about 3 min. Add wine and simmer about 1 min.

2.)Dissolve cornstarch in chicken broth in a small cup and whisk until blended. Add mixture to skillet and simmer 2 min, until sauce thickens. Season to taste with salt and pepper. 

3.) Transfer cooked linguine to four individual shallow bowls and spoon shrimp and sauce over top. Sprinkle with parsley and basil.

Ingredients:

Sugar free devils food cake mix

Can of pumpkin 15 oz (Make sure it is pure pumpkin, not pie filling) 

Lily's no sugar added baking chips (1/2 cup)


Instructions:

1.) Combine dry cake mix and can of pumpkin. Mix well. 

2.) Add chocolate chips and fold into cake mix. 

3.) Spray baking sheet with cooking spray.

4.) Place a spoon full of cake mix on the baking sheet. Continue leaving about an inch between each cookie.

5.) Set oven to 375 and bake for 16-18 minutes. 

Pudding dessert

Ingredients:

Sugar free Instant pudding (any flavor)

banana (any fruit desired)

Fat free whipped cream


Instructions:

1.) Follow instructions on the box of pudding.

2.) Place pudding in small serving bowl (makes 4 servings)

3.)Top with your favorite fruit or crumble a fiber one bar over top.

4.)Add whipped cream.

Chocolate Donuts

Ingredients:

Sugar free devils food cake mix

Powdered sugar


Instructions:

1.)Follow instructions on the box of cake.(Instead of using oil substitute with sugar free apple sauce 1/2 cup) 

2.) Pour cake mix into donut mold. 

3.) Set oven at 325 and bake for 16-18 min.

4.) Let them cool for 10 min then sprinkle with confection sugar.

Loaded Toast

Old fashioned Oats with fruit

Ingredients:

Sara Lee 45 calorie multigrain bread

low-fat cottage cheese

arugula 

crumbled goat cheese

balsamic glaze


Instructions:

1.) Toast bread

2.) Add 1/3 cottage cheese to toast

3.) Add arugula on top

4.) Add crumbled goat cheese

5.) Top it off with balsamic glaze

Old fashioned Oats with fruit

Ingredients:

Old fashioned oats (1/2 cup)

Water or almond milk (1cup)

Any flavor skinny syrup

Splenda (one packet)

Cinnamon (tsp)

Any fruit desired


Instructions:

1.) Cook oats as directed

2.) Add one pump of skinny syrup while oats are cooking

3.) Add packet of Splenda and stir

4.) Sprinkle cinnamon on top

5.) Add fresh fruit

Whole wheat pasta with spinach and sun dried tomatoes

Ingerdients:

Morning star buffalo chicken veggie patty

Shredded lettuce

Tomato

Red onion

Pickle

Fat free shredded cheddar cheese


For the Mac sauce:

Light Mayo

No sugar added ketchup

Pickle juice

Garlic powder

Paprika

Pepper


Instructions:

1.) Cook veggie burger as directed

2.) In a bowl add shredded lettuce

3.) Cut up the burger and add on top of the lettuce

4.) Dice red onion add in bowl

5.) Dice tomatoes and add on top

6.) Dice pickle and add to bowl

7.) Sprinkle shredded cheese on top


Mac Sauce instructions:

1/2 cup light mayo

2 Tbsp no sugar added ketchup

1 Tbsp pickle juice

1/4 tsp garlic powder 

1/4 tsp paprika

1/4 tsp pepper

Mix well and add amount desired to burger bowl.

Ingerdients:

Whole wheat pasta

fresh spinach

sun-dried tomatoes (dry not in oil)

olive oil

parmesan cheese

salt 

pepper

garlic powder

onion powder




Instructions:

1. boil the pasta and drain (save a cup of the pasta water)

2. In a separate pan pour the cooked pasta into the pan

3. Add pasta water so the pasta doesn't stick and add olive oil (2tbs) mix it all together and add spinach

4.Once the spinach has cooked down add sun dried tomatoes and parmesan cheese, mix together and let it cook on low for a few minutes stirring frequently.   

5. Enjoy!
